Heat the ghee in a pot over medium heat. Add the garlic and ginger and saute until very fragrant, about 2 minutes.
Add the rice and 3 cups of water.
Add the turmeric, lemon juice, and salt. Cover and bring rice to a boil. Reduce heat to a simmer and cook for 10 minutes, or until the water is absorbed. Fluff rice with a fork, then gently fold in the raisins.
Top with toasted almonds and serve alongside your main entree.
Notes
If the instructions on the package of rice call for a different amount of water, use the amount stated on the package.You may substitute coconut oil for the ghee.Feel free to use toasted pine nuts in lieu of the toasted almonds.Barely adapted from Paleo Power Bowls
