Remember my parents’ recent influx of beef into their freezer? I’m still cooking my way through my share. I apologize in advance to those who aren’t big on red meat – I’ve got to make room in my own freezer before I can start focusing on chicken or fish, but I promise we’ll get there.
It’s no real secret (to me, at least) that beef stroganoff is one of the best things you can do with round or flank steak. So when I found a recipe promising beef stroganoff in under 30 minutes with the use of condensed soup, I took that as a challenge to make beef stroganoff in under 30 minutes, no condensed soup in sight.
This meal is quick, comforting, and delicious. If you’re looking to sneak in some extra veggies, feel free to add some sliced red bell peppers or even some peas to the sauce. Your family is going to love this one.

What a great idea buying part of a cow! I can imagine grass fed beef would be awesome to have on hand to thaw out and use any time. I have fond memories of my mom making beef stroganoff when I was a kid but she took all sorts of shortcuts. Your recipe looks fantastic and I love how quick it is to make!

Just wanted to let you know that your beef stroganoff was a huge hit with DB. He works late 3 nights a week and I feed him leftovers (ahem) frequently.
