Buttermilk pancakes with slightly-caramelized slices of bananas and crumbled bacon. Top with butter and maple syrup for a savory-sweet brunch recipe that is pure perfection.
Welcome to Brunch Week, friends!
Yes, you just read that correctly: An entire week dedicated to brunch. Susan from The Girl in the Little Red Kitchen (I know you remember her from last week’s Friends First post) and Terri from Love and Confections have been working tirelessly to organize 32 bloggers and 11 sponsors to bring you a week’s worth of brunch recipes and one amazing giveaway.
In fact, make sure you pop over to today’s other post to check out the giveaway, which will be going on from now (Monday, May 5, 2014) until Mother’s Day (Sunday, May 11, 2014). There are tons of prizes that you could win courtesy of our amazing sponsors – this is one you don’t want to miss!
As soon as I decided to participate in Brunch Week, I knew immediately what recipe I wanted to share on the first day. When my parents came to visit back in February for my mom’s birthday, we went out to brunch at our favorite breakfast places and she ordered a stack of banana bacon pancakes. I have to admit, I wasn’t sure about them when I heard the description, but as soon as I took a bite, it was all over. I knew I had to remake them in my own kitchen as soon as possible.

Banana Bacon Pancakes
Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat pastry flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 2 eggs
- 4 tablespoons unsalted butter melted
- 1 teaspoon vanilla
- 4-5 strips applewood smoked bacon cooked and crumbled
- 2 bananas thinly sliced
- Butter for griddle
Instructions
- In a large bowl, whisk together flours, sugar, baking powder, baking soda, and salt.
- In a separate bowl or large measuring cup, whisk together buttermilk, eggs, butter, and vanilla. Pour wet ingredients into dry ingredients; mix until just combined.
- Heat a griddle over medium-high heat. Brush heated griddle with butter, then wipe excess butter off with a paper towel. Pour batter onto griddle; top with slices of banana and crumbled bacon. Cook until bubbles form and burst on top of pancakes, about 3 minutes, then flip and cook until golden on the underside, another 1-2 minutes. Serve pancakes warm with butter and maple syrup and additional banana slices and bacon if desired.
California Walnuts, Bob’s Red Mill, Oxo, Dixie Crystals, Whole Foods Market Doctor Phillips, Grimmway Farms, Woot Froot, Vidalia Onion, Baloian Farms, Stemilt and Bonne Maman are providing the prizes free of charge. I have received product related to these brands to use for #Brunchweek. All opinions stated are my own.
Wow banana and bacon. Interesting combination. How was the taste like? I am constantly trying something new but never saw this combination.
Tnx for the recipe.
Little bit savory, little bit sweet, just the right amount of both!
Bacon and bananas in a pancake?YES! Yay for Brunch Week! Pinning!
Right? Leave it to brunch week to bring together all of the flavors.
I would be happy to dive into your plate of pancakes for my second breakfast of the day! What a magnificent flavor combination!!!
Exactly how many breakfasts are we allowed in a day before it becomes excessive? Wait, don’t tell me. I just want to eat breakfast all day, every day.
Oh yea bacon in my pancakes and a side of bacon please!
Oh, you know there was some extra bacon involved! 😉
Craving bananas and bacon now 😉 Thanks for participating this year!
Thanks again for all your work in hosting!
BACON!! WHY have I never made bacon banana pancakes?! This is such a beautiful stack of breakfast, I barely know what to do with myself. Can we brunch? Yes, let’s brunch. All week!
Let’s brunch every day!
Also, it’s juuuust maybe a point of pride that I went for a pancake flavor combo you, the pancake queen, hadn’t thought of yet. 😉
Oh my word! You had me at bacon and kept me drooling with the banana pancakes!
If I’m going to out-do myself, it might as well be for brunch week, right? 🙂
I’m glad someone included banana pancakes…they are essential!!
Preach, sista!
I don’t nearly eat enough brunch foods, I usually just eat a boring banana for breakfast, which seemed ok until I saw these bacon and banana pancakes! I’m so glad you all are doing a bunch week because I really need some fun, new brunch ideas 🙂
Well, now you know what to do with that banana next time! 🙂
Banana and bacon are perfect together. Your is a awesome recipe that I know my family will love. So glad you shared
Thank you, Veronica!
I JUST had a banana split with bacon at my birthday work lunch.
Ah-ha, guess the flavor combo is already catching on! 😉
I’ve been eating banana, bacon and peanut butter sandwiches my entire life. (Elvis would be so proud)
I stumbled across a box of banana pancake mix at a local store and gave it a try unsure how a mix would taste. They were good but I’m sure this recipe that is from scratch and has real bananas will far better.
I cooked bacon to go along with the pancakes and instead of eating it on the side, my children and I layered the bacon in between the pancakes and had nothing but clean plates left. Not to mention very satisfied tummies. I’m going to try this recipe this weekend. TGIF because I would hate for it to only Monday and have to wait all week for the opportunity to whip these up.
In my opinion, Bacon is the Holy Grail of meats and I never met a banana recipe I didn’t like. I will give you feedback on how well my family of 5 likes them. Thank you so much for sharing this recipe.
“In my opinion, Bacon is the Holy Grail of meats” <-- My husband would agree. 🙂
Oh my gosh, I HAVE to try these this coming weekend. Is it really only Monday?
Well…you could always call in “sick”… 😉
Looks incredible, sounds a bit weird. But I trust you and will try that for our next pancake feist… 🙂
Gotta trust! I promise it’s amazing!
Bacon and banana…LOVEE Happy Brunch week!
