I might have a bit of a pie problem.

It only just occurred to me that I have posted two other pie recipes in the past two weeks.

I mean, I assume that you desperately needed some Banana Coconut Cream Pie and some Deep-Dish, Crumb-Topped Apple Pie in your life. I know I did. They’re two very different pies for people with different palates.

Unless you’re feeding me, in which case just give me ALL THE PIE, PLEASE.

Have you ever been to an event where they served incredibly mediocre pie? Pie that just made you wish you had reserved the stomach space for a piece of cake, or perhaps a cookie? Pie that made you wish you had extra pie tucked away in your purse for emergencies such as this?

You’d be surprised at how often this happens to me.

These little Apple Pie Cookies are bite-sized for your convenience.

On the one hand, there’s the portion control factor. You can eat one or two cookies and hide the rest without having an entire pie staring at you, begging to be eaten. On the other hand, there’s the portability factor. Whip these up for your next picnic or summer barbecue – they’re far easier to pack and take with you than a normal pie.

Go ahead, store a few in your purse. Find yourself stuck in a traffic jam? Need to diffuse an awkward conversation with a dessert? Unexpectedly encounter some truly tragic pie? Just reach into your bag – Emergency Apple Pie Cookies to the rescue!

I am not sure what it says about me that I absolutely consider all of these above scenarios appropriate pie-cookie-eating opportunities. I think it must mean I’m living right.

  1. I think I just found our newest Sunday night snack. Wonder how many of these Daddy will consider “a snack”? Holy moly, I want to stay home from work today and make these.

  2. How is it that you’re able to make handheld pies so cute that all I want to do is bear hug the living crap out of them immediately prior to devouring them? Like you, I have no qualms about any type of pie. You can show me pretty much any pie and I’ll be all “ooooooooohhh such-and-such pieeee…that’s my faaaavorite!” And just like you, I believe there’s nothing worse than mediocre pie. I pretty much won’t get pie from a restaurant unless I’ve heard the ragest of reviews about it. But now that you’ve signed an agreement stating you’d be my official pie maker, I won’t have to worry about that anymore, now will I? Will I?

  4. Can we use the crust/egg wash/ sprinkle idea along with maybe canned pie filling for other flavors?

    If not, I’d like to request a recipe like this for cherry and one for also pumpkin and one for peach pies too!!!!

    1. Hi there – Pumpkin is a great idea for fall – I will get to work on that! In the meantime, you could definitely use the same concept with canned pie filling, though be cautious with big pieces of fruit – they may not fit into the small sizes as well. I would cut cherries in half and peaches in small pieces before adding to the crust.
