She is funny, quirky, and amazingly talented…and she just finished writing her first cookbook! I am so proud of her I could squeal. (Oh wait, I did.)

This book has been a major labor of love for Julia, and let me tell you, her work paid off – the book is gorgeous! She also covers the health benefits of each and every recipe – we all know that probiotics are crazy good for us, but Julia tells us exactly why. I think the best part, though, is that while some of the recipes are more ambitious (brewing your own kombucha is no joke!), others take very little time at all. Making your own yogurt? Easy peasy. Using said yogurt in a delicious smoothie recipe? Even easier. Find a recipe that meets your desired level of time and effort, and you’ll be on your way to a healthy, happy body in absolutely no time at all.

This Blueberry Mango Smoothie is one of those incredibly easy recipes from the book. You can use your own homemade blueberry yogurt to make this smoothie that is full of antioxidants and immune-boosting vitamins and minerals, or you can cheat and use your favorite store-bought yogurt. Either way, a healthy and delicious breakfast or afternoon snack is just a blend away.

Ingredients
  

  • 1 whole mango peeled, diced, and frozen
  • 1 cup frozen blueberries
  • 1 ripe banana frozen
  • 1/2 cup blueberry yogurt
  • 1/2 cup almond milk
  • 1/2 cup orange juice
  • 1/4 cup full-fat coconut milk for topping optional

Instructions
 

  • Add all of the ingredients except for the coconut milk to a blender. Blend until completely smooth.
  • Pour the smoothie into two glasses. If desired, serve with a bit of coconut milk poured on top.

Notes

While the original recipe calls for blueberry yogurt (a recipe for which is in the book), I used plain Greek yogurt and it was equally delicious!

  2. Ooo! I have some frozen mango and frozen blueberries in my freezer. I think I’ll make this tomorrow for lunch and pretend that it’s spring and I can see green outside and I don’t live in a snow globe.
