Blueberry Pomegranate Smoothie and a little Julia Child

I alluded to some good news in my 2013 recap post, and now I can go ahead and fill y’all in: For the past few months I have been working part-time for a PR firm in the Chicago area. It was supposed to be a temporary position, just to help them get through the holidays, but just before Christmas I was offered a full-time position.

And I accepted.

Want to know something else pretty amazing? This past weekend Boyfriend received a job offer, too. He’s been searching since he moved here and to finally have both of us employed – in fields that we love – is the best Christmas gift we could have received.

We’re practically millionaires!

But seriously. God is so good, and we are so blessed.

2014 is off to a pretty great start, so I thought I would continue the greatness with my new favorite breakfast: this Blueberry Pomegranate Smoothie.

I’m not much for making resolutions; I’m more for starting the new year off with some balance. For me, balance means reading my new Julia Child cookbooks while sipping a super healthy Blueberry Pomegranate Smoothie. We’ve got banana for potassium, blueberries for vitamins C and K, manganese, and antioxidants, Greek yogurt for protein, and pomegranate juice for even more antioxidants. It’s both sweet and tart and will easily become your new favorite breakfast or post-workout snack. Personally, it’s my favorite “I indulged too much at dinner last night” recovery tool. Because, you know, balance is important.

Blueberry Pomegranate Smoothie

Servings1 large or 2 small smoothies

Ingredients
  

  • 1 banana
  • 1 cup frozen blueberries
  • 3 tablespoons Greek yogurt
  • 1-2 tablespoons agave nectar optional
  • 1/2 cup pomegranate juice
  • 3-4 ice cubes

Instructions
 

  • Place all ingredients in a blender and blend until smooth.

  3. Oh my goodness, congrats!! I know the feeling .. the job search is agonizing. I feel like my part-time days were the most character building and now that I have a full time job I am so, so grateful. Perspective is a great tool 🙂

    And of course, I totally understand your balance, too. I like to balance my cacao obsession with green juice haha

    1. After working multiple part time jobs, I am so looking forward to the consistency of one full time position. Especially since BF is a personal trainer, so I feel like at least one of us needs a normal schedule! Haha. Hooray for adulthood. More or less.

    So you have been at the job a year now…. wow, and the boyfriend got a new job too. I hope you both bought a lottery ticket. HA! Just another 40 years and you can retire!!!

    Well you live in a GREAT city. I am from the burbs. Don’t you love the food in Chicago? besides the great parks, and the museums. Have you gone to Ravinia yet. ? Lots to do….
