I really, really, really hope y’all aren’t tired of pumpkin yet.
I mean, I know us food bloggers have been going strong since September 1, but I have just one last pumpkin recipe for you this year.
And it rocks.
I am not normally pumpkin crazy, but there is just something about this cake that made me want to eat all of it. I had to immediately package it up and take it to a friend to keep from inhaling it for dinner (though that did not keep me from convincing myself that the one remaining piece made a “healthy” breakfast…I mean, pumpkin and all…).
Can you guess the absolute best part about this dessert? If you have some of my homemade cake mix and homemade vanilla pudding mix on hand, it is a snap to make and comes together in just a few minutes.
Yep, that’s right, you can have a completely homemade cake made and in the oven in almost no time at all, which means that it would make a truly awesome addition to your Thanksgiving dessert table this year.
Everyone else has entire dessert tables, too, right??

PS: For those of you following along after Tuesday’s post, relief efforts are officially underway back home. People are now being allowed into Washington to help with the clean-up or bring supplies to people who lost their homes. Power and water have been restored for those whose homes are still intact (though as of Wednesday, a lot of the town was still under a boil-order), and people from around the community are still opening their homes for friends and neighbors to shower, have a hot meal, wash their clothes, charge their phones, or even stay the night. This article even tells how students from a rival school in the Chicago area are driving down this weekend to help with the clean-up. After something like this, there is no such thing as a small act of kindness – they are all big, and they all make a difference.
If you would still like to help, this article lists organizations that are both taking monetary donations and collecting physical items to go towards the relief.

Loving the swirly twirly goodness!!! I am ok with pumpkin still! And yes we do have a dessert table at our Thanksgiving dinner! Totally normal!

I’m kind of obsessed with it. Dessert in a snap! Which is great if you are like me and randomly offer to bring dessert to things on a last-minute basis, but know you couldn’t get away with a store-bought anything. 😉
Keep the pumpkin coming! I can’t say no to a good cake with a beautiful swirl, throw in pumpkin and it’s just perfection!
