I promised you tacos. And when I promise tacos, I follow through.
These Grilled Steak Tacos are now being referred to as “The Tacos” in my house. In the past month, Boyfriend and I have made them about 234235 times. {Ok, at least 4. I’m an exaggerator. What else is new?}
Boyfriend says that these are the best tacos that he has ever had. I found this statement somewhat humorous at first, given how incredibly easy they are to make. But based on the reactions of everyone who has had them, I think he might just be on to something. Seasoned, perfectly-grilled steak, creamy guacamole, and crunchy Fire-Roasted Corn Salsa, all wrapped up in a charred corn tortilla…
I don’t know why you’re even still reading this. You should be making tacos, already!
Fire-Roasted Corn Salsa recipe.
Homemade Taco Seasoning recipe.
Grilled Steak Tacos
Ingredients
For the steak:
- 1.5-2 pounds flank or sirloin steak
- 3 tablespoons homemade taco seasoning
- Kosher salt
For the guacamole:
- 3 ripe avocados diced
- 1/2 red onion finely diced
- 1 large or 2 small jalapeños seeded and diced
- 1-2 roma tomatoes diced
- 1-2 cloves garlic minced
- Juice of 1-2 limes
- Kosher salt
- Cilantro
For the tacos:
- Corn tortillas
- Corn salsa
- Other optional toppings: cheese sour cream, hot sauce, etc.
Instructions
- Heat your grill to medium heat. While grill is heating, rub the taco seasoning into both sides of the steak. Sprinkle both sides liberally with salt.
- When grill is hot, place steak on grill, cooking for 3-5 minutes per side, depending on the thickness of the steak. Remove from grill and allow to rest for about 10 minutes.
- To make the chunky guacamole, stir together the diced avocados, onion, jalapeños, tomatoes, and garlic, and add lime juice, salt, and cilantro to taste.
- To char the tortillas, turn a gas stove burner to a medium-high flame. Place the tortilla over the flame (very carefully!), and turn with tongs when the tortilla starts to char, about 30 seconds. Wrap charred tortillas in a clean kitchen towel until ready to serve.
- To serve the tacos, slice the steak against the grain into 1/4-inch slices. Allow your guests to build their tacos as they so desire!

The steak, the corn salsa, and the guac are making me crave tacos! I wish I had steak in my house! Hmm maybe this will save us a Chipotle trip! Or just have us eating tacos three out of the seven days of the week!

Ha. When you posted the corn salsa the other day I though they would be perfect on chicken tacos. Steak is even better!
