Surprise, surprise, guys: I don’t do mornings.

I like to sleep in late, then roll out of bed and have breakfast be a one to two step operation. Usually that means things like smoothies or oatmeal, but occasionally you need something different.

Pancake mix is perfect for those lazy morning cravings, but not only can pancake mix get expensive, who really knows what’s in it? This homemade Bisquick mix is incredibly easy to pull together, and even easier to use – just use it anywhere that you would use the original. We’re talking quick and easy pancakes…and for that my morning-self couldn’t be more grateful.

Instructions

  • Add the flour, baking powder, baking soda, salt, and sugar to the bowl of a food processor. Pulse just to combine.
6 cups all-purpose flour, 3 tablespoons baking powder, 1 1/2 tablespoons baking soda, 1 tablespoon fine sea salt, 3 tablespoons granulated sugar
  • Add the butter and pulse just until the mixture resembles coarse meal.
    1 cup unsalted butter
  • Transfer to an airtight container. Store in the refrigerator for up to 2 months. Use cup-for-cup in place of store-bought baking mix, such as Bisquick mix.

Notes

Ingredients

  • Bisquick mix does contain a small amount of sugar, which is why sugar is included in this recipe to better mimic the original. You can omit the sugar if you prefer, though.
  • Vegetable shortening can be used in place of the butter for a dairy-free version. The mix should still be stored in the refrigerator, though, as the mix does not contain the same stabilizers that store-bought mix does.

  1. I need to make some of this soon so that we can have some pancakes and/or biscuits on a weekend morning. Actually, I’m wishing I had some made up right now. 😀

  2. Love this! I’ll be using your bisquick mix to make sourdough pancakes! 🙂 Mornings for me are definitely slow and pancakes that can be made quickly are a definite plus!
