Holy moly, you guys, I am so, so, SO excited for today’s post because I am introducing what I think will be a fun new series for y’all: Friends First. On the first of each month, I will be introducing you to one of my favorite blogger friends and you’ll get to hear directly from them in a fun guest post. While most of these bloggers are primarily food bloggers, they’ve been given free rein to write about anything they feel shows their personality and what they’re all about – food or not!
Up first is the ahhh-dorable Abby from Seaweed & Sassafras! Abby is a military wife, mom to bulldog Watson (I love bulldogs!), fashion-lover, and big believer in eating seasonal foods and avoiding processed foods as much as possible – love that! And to top it off, she’s as sweet as can be. She has the most divine salmon recipe for you, so I’ll let her take over!

Hi! I’m Abby from Seaweed & Sassafras. When I first saw Stephie’s email inviting me to be a part of her Friends First project, “yes!” flew right out of my mouth. Pretty sure I startled my bulldog. I signed right up, excited to hang out together today. Thanks again Stephie for including me!
Some nights I just want to put my sweatpants on and grab a bowl of Ramen. The couch is the only thing on my mind, well that and zoning out to Duck Dynasty, Jack! But we just got back from a trip to Scotland and (for now at least) I’m left inspired by the rolling green hills dotted with sheep, outlined by small stone fences leading down to towns and castles dating back far beyond anything I can remember from history class…and the food, oh my, the food.
I decided we needed to keep up with all of the fresh, clean food we have been eating abroad but have it be quick and easy at the same time. This salmon can be prepared in less than 30 mins! Love that. I’m a huge fan of recipes that multi-task too, so while the salmon is roasting away in the oven you can focus on the asparagus and then it’s all done at the same time, beautiful. Life just got a little easier.
Wild Salmon with Dill-Mustard Sauce and Sautéed Asparagus
Ingredients
For the salmon:
- 8 oz. Wild Salmon filet
- 1 Tablespoon Olive Oil
- Salt and Pepper
- 1 Tablespoon Mayonnaise
- 1 teaspoon Dijon Mustard
- Fresh Dill chopped
For the asparagus:
- 1 bunch Asparagus ends trimmed
- 1-2 Tablespoons Olive Oil
- 1 teaspoon Herbs de Provence
- Salt and Pepper
- Parmesan Cheese
Instructions
- Preheat your oven to 450 degrees F. Mix together the Mayo and mustard and set aside. With your salmon skin-side down, sprinkle the pink filet with salt and pepper, then spread the mayo mixture over the top coating it evenly. Place a few chopped dill fronds on top to finish.
- Drizzle a tablespoon of olive oil in an oven-safe pan and heat on the stove to high heat. Place the salmon skin-side down in the pan and cook for 5-7 minutes for a nice crispy skin.
- Now move the pan with the salmon into the oven to finish cooking for about 12-15 minutes depending on how thick your salmon is. You want it to turn an opaque, lighter, color and be more firm to the touch.
- With that cooking, in another skillet add 1 or 2 Tabelspoons of Olive Oil and bring to med-high heat. Toss in the asparagus and sprinkle with salt and pepper. Cook for 2-3 minutes, then add the herbs de provence and cook another 3-4 minutes. Remove from heat and sprinkle with parmesan cheese to finish.
- Enjoy!
